Albanian Rice Balls- Qifqi
Ok... have to admit, saw this recipe and it recommended serving with ajvar... that's what made me do it :). Ajvar is one of my favorite things, it's a red pepper spread and it's just amazing. Anyway this was a fantastic delivery method for ajvar. Fried rice balls, I did make a small adaptation because I'm not a fan of mint. I used oregano instead. Weird I know, but I thought it worked perfectly. Also I have an æbleskiver pan that needs to find some more uses, this worked out well for it.

- 0.05cuprice
- 0.19eggs
- 0.05teaspoondried oregano (or more traditional mint)
- 0.02teaspoonground black pepper
- 0.05teaspoonsalt or more to taste
- Olive oil for frying

Boil 2 cups water.
Add the rice, reduce heat to low, cover and steam until rice has absorbed all of the water, about 15 minutes. Leave to cool to room temperature.
In a bowl, beat 4 eggs with the oregano (or mint), pepper and salt.
Add the rice and mix thoroughly
Heat a molded pan (in my case the æbleskiver pan) and brush each cavity with olive oil.
Fill each cavity with the rice.
Cover and cook on low heat 5-10 minutes on each side until golden and crispy.
Use ajvar for a tasty treat.
