Plum Pie Bars

So I got plums from the farmers market and didn't know what to do... So why not make pie bars???

For The Filling

  • cups
    chopped plums
  • 0.08tablespoons
    granulated sugar
  • 0.08tablespoons
    cornstarch
  • 0.04teaspoon
    ground cinnamon
  • 0.02teaspoon
    ground ginger
  • pinch salt

For The Crust

  • 0.08cups
    all-purpose flour
  • 0.02teaspoon
    baking powder
  • 0.01teaspoon
    salt
  • 0.04cup
    unsalted butter
  • 0.04cup
    granulated sugar
  • 0.04teaspoon
    vanilla extract

For the Filling

  1. Toss plums with sugar, cornstarch, spices and salt; set aside.

For the crust/topping

  1. Preheat oven to 350, line a 13x9 baking tray with parchment paper.

  2. Cream butter and sugar together until light and fluffy the beat in vanilla.

  3. Combine flour, baking powder, salt in a separate bowl then mix into to our sugar mixture.

  4. Using 3/4 of the dough press it down into the parchment paper lined pan.

  5. Spread plum mixture over the dough and then crumble the remaining dough on top (small pieces just a nice crumb topping)

  6. Bake for about 55 minutes or until the top is golden and the fruit is bubbling.

  7. Cool on a wire rack for about 30 minutes. And then enjoy!!!
